Shrimp ceviche with mango

This delicious snack is very fresh, it is prepared quickly and easily. If you don’t want the bittersweet taste of the mango you can skip it, just like the chili if you prefer not to itch.

Cook the shrimp in a pot with water, salt, and a sprig of mint until they turn pink, about 5 minutes. Drain them, cool them under running water and place them in a bowl with ice.

Finely chop the onion and chilies. Peel and cut the mango into square pieces. Place everything in a bowl along with the cooked and peeled shrimp.

Squeeze the orange and lemons, add the olive oil and salt to taste. Let marinate for at least half an hour. It can be prepared a day in advance and left tightly covered in the refrigerator.
